It was all

a dream…

until I started bbqing 7 years ago on a Weber Kettle charcoal bbq. I learnt how to monitor, control and maintain temperature the old school way but opening and closing vents for air flow. I also learnt about different flavours on meat and in general cooking and what over-seasoning and under-seasoning does to the meat and other foods at the end of the cook.

My Wife and children have been my critics and testers which definitely helped me evolve in to the bbq’er I am today. They provided me with their truthful and honest opinions on what I could  do to change and make better for the next time.

Through out the 7 years I have progressively built a collection of different bbq pits to gain more knowledge on how they individually run and I can tell you none of them have been an easy transition but I’ve always welcomed the challenge. YouTube has been a massive help to master different bbq methods, the end goal is less time fussing and more time enjoying the process.
